Not Too Sweet Chocolate Chip Muffins with Orange Butter


2 1/4 cups all-purpose flour
1 TBS baking powder
1/2 tsp salt
1 TBS + 2 tsp sugar
1/4 cup semisweet chocolate chips
4 TBS butter, melted
1 egg, beaten
1 cup milk

Orange Butter
8 TBS butter, softened
2 TBS powdered sugar
2 TBS fresh orange juice
Grated peel of 1 orange

* Preheat oven to 400 degrees

* Grease 12-cup muffin tin or line with baking cups.

* Sift flour, baking powder, and salt into a large bowl. Stir in sugar and 
   chocolate pieces.  In a small bowl mix melted butter, eggs, and milk. 
   Pour into dry ingredients and stir until flour is moistened but looks lumpy.
   Spoon mixture into muffin tin. 

* Bake 15 -20 minutes, or until golden brown.

* For orange butter, beat all ingredients together util fluffy. Serve
   on the warm chocolate muffins. Yummmmmmmmy.

Please note that these muffins are great hot, but lose their special 
something when they are cold. Enjoy 'em asap!!
