The first time I had Hopia I was visiting my friend in Hawaii. He lived in the dorms, so cooking was always done in a huge communal kitchen shared by 35 other folks. I made friends with a German couple who was living there and they taught me how to make this delicious coconut milk pudding. They even went as far as to go out in the rainstorm, foraging for banana leaves to serve it on. (This is a fairly easy task in Hawaii cause there are so many around). Nothing like eating pudding off of a leaf plate in a tropical rainstorm.
3 cups Coconut milk
1/3 cup Sugar
1/3 cup Corn starch
1/4 tsp salt
* Mix sugar, salt, and corn starch in a bowl.
* Put coconut milk in a pot and add dry mixture.
* Boil on medium heat until it thickens. Turn to low
and cook 4 more minutes.
* Spread out to cool on banana leaves, or a plate if you
don't have any laying around.
* Eat pudding and say all the Hawaiian words you know.
