Lamb Stew




MAKES   8-10   SERVINGS


Nothing like a big pot of rich lamb stew to 
feed the masses and keep them happy. This is
a lovely winter dish that gives you that warm 
feeling inside. Youıll love making it too, because
it's so easy. The combination of spices give it 
great depth of flavor.  


3 lbs  lamb stew meat, cubed 
2 tablespoons olive oil
1 yellow onion, sliced
2 cloves garlic
1 large can crushed tomatoes with juice
4 tablespoons fresh oregano
8 mint leaves, chopped
2 tablespoons Betty's spice mix (see recipe)
1 tablespoon basil
1-2 tablespoons balsamic vinegar
1 cup orzo pasta
Salt to taste 

1. In a large saucepan over medium heat, brown 
onion and garlic in oil.
2. Brown lamb with onion and garlic mix. 
3. Add oregano, mint, Bettyıs spice mix, basil, 
balsamic vinegar, and tomatoes.
4. Simmer until meat falls apart, adding more 
liquid if necessary.
5. Add orzo, simmer until cooked.
6. Adjust seasonings.
