Tabouleh


1/2 cup bulgar
1/2 cup minced onion
1/2 tsp. ground allspice
1/2 tsp. ground pepper
1 to 2 tsp. salt
3 cups finely chopped parsley
3 cups chopped tomatoes
1/2 cup scallions
1 cucumber, peeled and chopped
1/2 cup finely chopped mint
1/2 cup lemon juice
3/4 cup olive oil


* Soak bulgar in cold water for 20 minutes, than drain in colander. 
Water should cover bulgar by 1/2 inch. 

* Combine onion, allspice, pepper and salt. Set aside.

* In a large bowl, combine parsley, scallions, cucumber, tomatoes and mint. 
Gently mix in bulgar mixture, onion mixture, lemon juice and olive oil.
