The first year I decided to make Thanksgiving dinner, I was vegetarian. This posed the big dilemma of what to have for the main dish. Some fellow vegetarians gave me this recipe, which has been pleasing crowds ever since. And... no, it's not shaped like a turkey, but you can cookie cutter cute shapes into it if you want... I suggest turkeys. You must stuff this "bird" with your favorite stuffing mix to make it really work well. Sorry... I don't have exact measurements, so you'll have to taste as you go. Have confidence, you can do it.
Firm tofu
Poultry seasoning
Onion powder
Garlic powder
Soy sauce
* Break tofu up and squish as hard as you can to get all the excess water out.
Mix with all the above. Keep tasting until you get it good.
* Line a colander with cheese cloth or a clean dish towel.
* Put 1/2 of the tofu mix in the colander. Add cooked stuffing, then put the rest
of the tofu mix on top. Put a pie tin or plate or something on the top of tofu mix.
Place a couple of heavy cans on top of the plate. Let this sit in you frige overnight
to press out all excess liquids.
* Flip tofu turkey on to a cookie sheet. Baste with a sesame oil and soy sauce mix.
* Bake at 350 until outside is crunchy. Baste periodically for the best flavor.
Optional activity: Press cookie cutter shape of choice into the bird
before putting it on the table.
