Roasted Tomatillo Salsa


15 Fresh tomatillos, unpeeled
1 Yellow onion, cut in half
3 Garlic cloves, unpeeled
2 Whole Jalepenos
1 Cup cilantro
Salt to taste

* Put tomatillos, onion, garlic, and jalepenos in a cast iron pan. 
   Roast until partially blackened and tomatillos get soft. About 10 minutes.
* Take off heat and let cool. Peel everything and put in a blender. 
			Blend until smooth, then add cilantro. Salt to taste.

This is great with black beans!! It lasts for a couple of weeks in the fridge, so you can 
enjoy it over and over.
